Corn and Tomato Salsa
Fresh salsa is quick and easy to make and goes well with chips, burritos, tostadas, quesadillas and tacos.
2 large tomatoes
1 cup corn, fresh or frozen
1/4 cup minced onion
1/4 cup (packed) chopped cilantro
1-2 T lemon or lime juice
salt to taste, about 1/2 tsp
a few a red pepper flakes
Chop the tomatoes into 1/2 inch cubes. Mince the onion and chop the cilantro. Put all of the ingredients into a bowl and mix. Season to taste and serve!
Add up to 1 cup of black or pinto beans for additional protein and fiber.
